Are Americans getting "soft"? Yes, from a health and wellnes perspective, we are. The only parameter of healthcare in which we rank #1 on a world scale is the cost. Our obesity and diabetes epidemics continue. For the first time in two decades our life expectancy is starting to decline. Why is this? I believe there are several reasons, from a food industry that is more interested in profits than our health, to misinformation on what really are the best foods for human beings, to just not making nutrition a priority. For too many of us, the convenience of eating is more important than the nutritional value of what we eat. And, the time and energy it takes to shop for and prepare fresh, whole foods is spent on sitting at the computer, talking on our cell phones, or texting to share our current passing thought. Which brings me to physical activity. Most of us are simply not active enough. And I don't mean we have to spend hours at the gym. If you can accumulate 30 minutes of brisk walking every day, you're well on your way to better health. We're all bummed out about our politicians and economy. Where we still have control is in our lifestyle choices. Choose to eat more whole fresh foods, increase your physical activity, don't smoke, and if you drink, do so in moderation.

HEALTHY KITCHENS, HEALTHY LIVES is a conference offered by Harvard Medical School and the Culinary Institute of America at Greystone in Napa Valley, CA. This conference is offered annually, and is a MUST for anyone -physicians, nurses, nutritionists, parents-who really cares about the health of their community. I attended this conference last month, and came home inspired to create a program in the Coachella Valley to get our school children into the the kitchen and teach them that healthy foods can be very tasty and interesting, and preparing good food can be fun and exciting! After years of teaching my patients how to eat healthy, it is now time to SHOW them. Stay tuned for details.

The flow of this New Year has swept me up in many ways. As 2011 is the 32nd anniversary of my 28th birthday, I have vowed to take better care of myself. So far, I am exercising more effectively, following my own nutritional guidelines more consistently, and meditating more. With the ever-increasing stress in the world, I am finding I need more quiet, personal time to maintain balance. Also, I have started learning Tai Chi, which has proven to be an incredibly powerful tool to increase my physical strength and my inner peace.

BE IN THIS MOMENT. For many of us, the holiday season can be pretty stressful, and even depressing. It's also a risky time for stress eating, which usually just compounds our negative feelings. Whether you're out shopping or baking in your kitchen, try to keep your mind with your body. That is, just be in the moment, which will do wonders in decreasing your stress. Sound almost ridiculously simple? Just try it and see. Merry Christmas, Happy Holidays, and a HEALTHY and PROSPEROUS NEW YEAR!

Thanksgiving dinner is over, and yes, I ate candied sweet potatoes, turkey stuffing, cranberry sauce, and, of course, turkey. So today it's back to no starches or sugar, and I hope my body will forgive me!! However, I will bake some chia cookies. Chia is in a different plant family from the grains - wheat, oats, barley, rice, etc. It was an integral part of the diets of the Maya and Inca tribes. It is high in protein, omega-3 fatty acids, and antioxidants, low glycemic, and no gluten. You can add the seeds to hot water or almond milk for breakfast "cereal", which I find quick and easy. I have also made some really delicious and very healthy cookies with chia flour. Just substitute olive or canola oil for butter, and Splenda or granulated fructose for sugar. Give it a try - even my husband likes them!

Many people who try to improve their nutrition per my recommendations find they really miss the starches. Things like mashed potatoes, cookies, pasta and bread. I have good news for you! A great tasty substitute, and you probably won't believe this, is "mock mashed potatoes" made from cauliflower. This is Nicole Bond's recipe from her "Healthy Harvest Cookbook. " You simply steam a pound of cauliflower florets with one small white onion. Put these into your Cuisinart, add two tbsp of olive oil, one half tsp salt, some ground black pepper to taste, and two pinches of nutmeg. Voila! You have a very tasty dish that is also very healthy.
